SUNSET CABANA BAR UNVEILS THE ART OF MULTISENSORY DRINKING COCKTAILS

FOR MORE than a decade, Sunset Cabana Bar at Alila Villas Uluwatu has been an iconic destination in Bali, perched over the cliff edge with a majestic ocean view, the sound of waves crashing below and a stunning Uluwatu sunset to relax to.

According to Hemal Jain, General Manager, Alila Villas Uluwatu said now, Sunset Cabana Bar elevates the art of drinking with a fresh collection of cocktails imaginatively crafted by the resort’s newly appointed liquid artist, Wirawan.

“We want to create a multisensory drinking experience for our guests where all senses will be spoiled. This is reflected in drinks that have been uniquely crafted by Wirawan and presented in a creative way. Prepare to be surprised,” he said.

On what inspired his signature creations, Hemal continued that Wirawan shares, on my first day at Alila Villas Uluwatu, I spent almost four hours just sitting at Sunset Cabana Bar, taking in the magical view, imagining myself on the deck of a boat sailing on an unexpected journey, and grateful to be blessed by the richness of Indonesian and Balinese culture. These were my inspirations. The result is an experience that truly wows.

“Infused with the essence of the ocean, the Segara cocktail is a perfect choice for guests to enjoy while looking out on the uninterrupted expanse of blue. The bar itself is surrounded by Uluwatu’s natural ecosystem, existing side by side with local wildlife, including monkeys, which provided the idea for Shiki Monki,” he noted.

A rich culture of rituals and ceremonies is at the heart of Balinese daily life. Presenting the pride of premium local spirits, Sasih Kesanga is inspired by the ritual that takes place in Bali right before Nyepi, or Silent Day, when Hindus at all levels of society and in every household perform the “Bhuta Yadnya” and make “caru”, a type of offering. Caru consists of five colours of noodles accompanied by side dishes and the authentic local Balinese spirit, arak.

Hemal explained that celebrating the uniqueness and authenticity of Bali and Indonesia while maintaining a focus on sustainability, the bar’s signature cocktails are made using organic and local fruit as much as possible: salacca in Alas Salacca, sirsak in White Noise and local coffee beans from five different regions of west Indonesia in Westpresso Martini.

“Great taste meets great innovation in specialties such as Omakase and Umadori, which feature a perfectly balanced blend of Japanese liqueurs and local ingredients. All-time favourites are also covered in a collection of classic cocktails taken to the next level, including Bloody Mary, Smoked Old Fashioned and Negroni made Alila style,” Hemal Jain concluded.
