SET ALONG Seminyak’s beachfront, Seasalt at Alila Seminyak presents Bali’s finest Coastal Brunch, a weekly gathering that invites guests to graze, linger, and savour seasonal specialties from sea and land with a Japanese twist.

Held every Sunday from 12 pm to 4 pm, the brunch experience embodies the restaurant’s status as one of Hyatt’s iconic venues in Asia Pacific and a renowned pioneer of sustainable dining on the island.

Seasalt’s Coastal Brunch offers a mindful dining experience with an emphasis on sustainability and fresh, local ingredients. While best known for its seafood, the experience also features premium meats and vibrant seasonal vegetables. Guests can explore a curated à la carte menu of tasting portions that can be reordered at leisure, along with The Chef’s Display, a refined buffet selection of unlimited seafood and Seasalt’s meat and vegetable specialities.

The combination enables diners to explore the full spectrum of Seasalt’s creativity and culinary skill, with a strong emphasis on fresh ingredients, local sourcing, and low waste principles. 

Highlights of the live stations include Banyuwangi oysters paired with inventive condiments such as Seasalt Mignonette, Nikkei Pepinillos Quinoa Salsa, and Spicy Tangy Ezme Nam Jim Sauce; seafood maki and dry-aged fish sashimi; and wood-fired carvings of roasted corn-fed chicken, slow-cooked herb sirloin, and freshly grilled catch of the day served with Balinese sambal. Guests can also enjoy creative pass-around dishes such as Pineapple Pear Gazpacho with pickled oyster and Seafood Ceviche with avocado and coconut milk, as well as interactive stations offering Angus beef tacos, poke bowls, and seafood and rice skin rolls. 

Complementing the buffet, the à la carte menu features indulgent signatures such as slow-cooked Wagyu short rib with Kalimantan black pepper, Persian-inspired lamb kofta, 72-hour handcrafted ramen broth, seafood dumpling soup, and Nusantara laksa, while desserts showcase the pastry team’s artistry using locally sourced chocolate, vanilla, and seasonal fruits.

Beverage packages further enhance the experience, as guests sip on their favorite cocktails and wines, popular choices like Minuty M Rosé and crisp Prosecco perfectly complement a leisurely afternoon by the sea. Adding to the ambiance, soulful saxophone melodies and laid-back DJ sets from Seasalt’s resident performers create an effortlessly relaxed Sunday atmosphere.
